Is pastuerized Goat and Sheep Cheese okay to eat or helpful in preventing cavities?

Goat and sheep cheese have different properties than cow cheese. Pasteurization is the process of damaging the cheese to destroy beneficial microorganisms. There is no reason at all to pasteurize cheese, it does not add to the health of cheese. In many places it is difficult to find cheese that is not pasteurized.

How effective a cheese in at healing cavities depends on how healthy the milk is. Most sheep and cheese milks are going to grain and hay fed. Pasteurization damages important vitamins in milk, and may even have a negative effect, during the vitamins into anti-vitamins that strip nutrients from the body.

There are also different pasteurization methods. Low temperature slow pasteurization is going to be less harmful than higher temperature pasteurization.
